Williamsburg Orange Cake



Love this cake. Should frost it with orange buttercream, but, the kids can't wait.


INGREDIENTS

* 2 3/4 cups cake flour
* 1 1/2 cups white sugar
* 1 1/2 teaspoons baking soda
* 3/4 teaspoon salt
* 1/2 cup butter, softened
* 1/4 cup shortening
* 1 1/2 cups buttermilk
* 3 eggs
* 1 cup golden raisins, chopped
* 1/2 cup chopped walnuts
* 1 tablespoon orange zest
* 1 1/2 teaspoons vanilla extract


DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan, two 9 inch round cake pans, or three 8 inch round cake pans.
2. In a large bowl, combine cake flour, sugar, baking soda and salt. Mix in butter, shortening, buttermilk, eggs, raisins, nuts, orange zest and vanilla. Beat with an electric mixer for 3 minutes on high speed. Pour batter into prepared pan.
3. Bake in preheated oven until a toothpick inserted in center of cake comes out clean. Bake 9x13 inch pan 45 to 50 minutes, or layers 30 to 35 minutes.

Ikan Sambal Kantan

BAHAN-BAHANNYA :
1 ekor ikan sebelah saiz sederhana (saya guna ikan bawal)
1/2 camca teh serbuk kunyit
1/2 camca teh lada hitam serbuk
Sedikit garam
1 biji limau nipis, perah jusnya
2 camca besar sos cili
1 1/2 camca besar cili kisar
1 camca besar sos ikan
1 camca besar gula
1 biji tomato, dicincaang
1 kuntuk bunga kantan, dihiris halus (utk ditabur)
Garam secukup rasa

A(tumbuh halus).
1 kuntum bunga kantan, dihiris
1 batang serai hiris halus
1 biji bawang besar, potong kecil
3 biji cili merah
3 ulas bawang putih
1 hirisan nipis halia
1/2 inci belacan, dibakar

CARA MEMBUATNYA :-)

1. Ikan disiang, cuci bersih dan kelar2 sedikit. Perap bersama serbuk kunyit, lada hitam tumbuk dan sedikit garam selama 5 minit, kemudian goreng hingga garing. Angkat, toskan minyak dan letak dalam pinggan sesuai.
2. Panaskan minyak, tumis bahan2 tumbuk halus hingga harum, masukkan tomato dan kacau hingga tomato layu, tambah sos cili, cili kisar dan gula. Masak hingga garing dan terbit minyak.
3. Perasankan dengan garam dan gula secukup rasa, tambah jus limau nipis dan gaul rata. Rasa dan jika ok boleh matikan api. Tuang sambal tadi atas ikan goreng, ratakan dan tabur hirisan bunga kantan. Hidangkan segera bersama nasi hangat.

Soft Marble Cake



My parents are here.
Chocolate cake is not an option for them, so I was searching for marble cake recipe.
Found this from Ummi's.
The many colours were Laiqa's idea.
I just copy paste the recipe.

SOFT MARBLE CAKE

# 270 gm mentega
# 250 gm gula kastor
# 260 gm tepung gandum
# 1 camt baking powder
# 6 biji telor
# 2 camb. susu pekat manis (condensed milk)
# 1 camb ovalette
# 1 camb air
# 1 camt esen vanila
# 10 gm serbuk koko
# 1 camt chocolate emulco (optional)
Cara-Cara:-

1. Griskan tin kek berukuran 10x7x3 atau 20 - 23 cm springform. Ketepikan.
2. Ayakkan tepung bersama dengan baking powder dan ketepikan.
3. Satukan mentega, susu, esen vanila dan pukul sehingga gebu dan ringan (apabila diangkat dengan spatula, adunan tidak jatuh). Ketepikan.
4. Kemudian dalam bekas lain, satukan telor, ovalette, air, gula, campuran tepung tadi dan pukul sehingga kembang dan rata.
5. Masukkan adunan mentega (no. 3) ke dalam adunan no. 4. kacau rata.
6. Keluarkan 1/4 adunan dan campurkan dengan serbuk koko dan chocolate emulco. Kacau hingga sebati.
7. Masukkan 3 senduk adunan plain ke dalam tin dan 1 senduk adunan cokelat. (
8. Ulangi sehingga habis adunan.
9. Ambil chopstick dan buatkan bentuk marble.
10. Kemudian bakar pada suhu 180C selama 45 - 50 minit atau sehingga masak (ikut oven masing-masing).
11. Setelah masak, padamkan api oven dan biarkan kek di dalamnya selama 5 minit.
12. Selepas itu bolehlah dikeluarkan dari oven dan biarkan betul2 sejuk baru dipotong.

Blueberry Butter cake

Since I still have some frozen blueberries left from my last cooking adventure, i searched for recipes that calls for blueberries. Found one in Gert's.


Ingredients :

2 stick of butter (1 cup)
1 1/4 cup of sugar
5 eggs
1/2 cup of milk
2 1/2 cup of flour
1 tsp of baking powder
1/2 tsp of salt
1 tsp of vanilla
2 cups of fresh blueberries (toss with 1 tbsp of flour)

1. Preheat oven to 350 degrees. Butter and prepare a cake pan.

2. Sift the flour, baking powder and salt into a bowl, and set aside. In a mixer beat the butter and sugar until light and fluffy.
3. Beat in the eggs one at a time follow by vanilla. Then slowly beat in flour in 3 addition alternately with milk.
4. Lastly fold in the blueberries. Pour batter into prepared pan. Bake until tester inserted near center of cake comes out clean about 1 hour or until golden brown.
5. Cool cake in pan on rack 10 minutes. Turn cake out onto cooling rack and cool completely before cutting into it.

Mexican Bun

Bahan2:
for filling:
- 1/2 cup salted butter, softened
- 1/4 tsp vanilla essence
- 3 tbsp brown sugar

for topping:
- 1/2 cup butter
- 1/2 cup icing sugar
- 2 eggs
- 2 tbsp instant coffee (Nescafe), dilute in water
- 1 cup all purpose flour

for the sweet bun:
- 5 cups high-protein flour
- 1/3 cup caster sugar
- 1/2 tsp salt
- 1 1/2 tsp instant dried yeast
- 1 egg
- 1 cup fresh milk
- 1/4 cup butter

Directions

For Filling:

  1. Beat butter in electric mixer on medium speed with the paddle attachment for three minutes. Blend in vanilla essence and brown sugar. Spoon mixture into bowl and refrigerated until firm.
  2. Divide mixture into 20 g portion into ball. Keep refrigerated until ready to use.
For Topping:.
  1. Beat butter and icing sugar in electric mixer with the paddle attachment on medium speed for five minute until mixture is light and fluffy.
  2. Gradually beat in eggs. Mix in coffee flavouring.
  3. Sift flour onto mixture and mix on low speed until combined.
  4. Refrigerate until ready to use.
For Sweet Dough:.
  1. Mix sifted flour, castor sugar and salt in electric mixer with dough hook on low speed for one minute. Mix in yeast.
  2. Add egg and water or milk. Mix on low speed for another minute. Mix on medium speed for eight minutes.
  3. Mix in butter. Mix five minutes more on medium speed until soft, smooth and elastic(but not sticky) dough forms.
  4. Remove dough from mixture and shape into a ball. Divide the dough into 55 g portions(should get 17 portions).
  5. Roll each portion into a ball. Cover the balls of dough and leave to rest for 10 minute
To shape the buns:.
  1. Flatten a ball of dough with the palm of your hand.
  2. Place a ball of filling in the centre of the dough.
  3. Gather the edge and pinch to seal. (Be sure to seal well or the filling will leak out during baking.) Pat into shape and place on a greased baking tray.
  4. Repeat with remaining portions of dough.
  5. Place each bun about 7.5 cm apart on the baking trays. Prove for 45 min in a warm place.
  6. Pipe the topping on the buns in a spiral, starting from the centre.
  7. Bake in preheated oven at 175 deg C for 15 min or until buns are lightly brown.

Chocolate Cake



2 cups boiling water
1 cup cocoa powder
2 3/4 cups all-purpose flour
2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 cup butter, softened
2 1/4 cups white sugar
4 eggs
1 1/2 tsp vanilla extract


DIRECTIONS

1. Preheat oven to 175 degrees C. Grease cake pans.
2. In medium bowl, pour boiling water over cocoa, and whisk until smooth. Let mixture cool.
3. Sift together flour, baking soda, baking powder and salt; set aside.
4. In a large bowl, cream butter and sugar together until light and fluffy.
5. Beat in eggs one at time, then stir in vanilla.
6. Add the flour mixture alternately with the cocoa mixture.
7. Pour batter into the greased baking pan.
8. Bake in for 25 to 30 minutes. Allow to cool.

Blueberry Orange Muffins



INGREDIENTS

1 cup quick rolled oats
1 cup orange juice
1 teaspoon grated orange zest
1 cup vegetable oil
3 eggs, beaten
3 cups all-purpose flour
1 cup sugar
4 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1-2 cups fresh blueberries


Directions:

- preheat oven to 175 degrees C
- soak oats in orange juice
- sift flour, baking powder, salt and baking soda into a bowl
- add in sugar, orange zest
- combine eggs and oil
- pour the oil micture into the dry. add in oats+juice
- mix well
- pour into a well-greased muffin tin
- bake 18minutes, or until toothpick inserted comes out clean
