Williamsburg Orange Cake



Love this cake. Should frost it with orange buttercream, but, the kids can't wait.


INGREDIENTS

* 2 3/4 cups cake flour
* 1 1/2 cups white sugar
* 1 1/2 teaspoons baking soda
* 3/4 teaspoon salt
* 1/2 cup butter, softened
* 1/4 cup shortening
* 1 1/2 cups buttermilk
* 3 eggs
* 1 cup golden raisins, chopped
* 1/2 cup chopped walnuts
* 1 tablespoon orange zest
* 1 1/2 teaspoons vanilla extract


DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan, two 9 inch round cake pans, or three 8 inch round cake pans.
2. In a large bowl, combine cake flour, sugar, baking soda and salt. Mix in butter, shortening, buttermilk, eggs, raisins, nuts, orange zest and vanilla. Beat with an electric mixer for 3 minutes on high speed. Pour batter into prepared pan.
3. Bake in preheated oven until a toothpick inserted in center of cake comes out clean. Bake 9x13 inch pan 45 to 50 minutes, or layers 30 to 35 minutes.

Ikan Sambal Kantan



Hari ni cuba resepi dari blog Mat Gebu.

BAHAN-BAHANNYA :
1 ekor ikan sebelah saiz sederhana (saya guna ikan bawal)
1/2 camca teh serbuk kunyit
1/2 camca teh lada hitam serbuk
Sedikit garam
1 biji limau nipis, perah jusnya
2 camca besar sos cili
1 1/2 camca besar cili kisar
1 camca besar sos ikan
1 camca besar gula
1 biji tomato, dicincaang
1 kuntuk bunga kantan, dihiris halus (utk ditabur)
Garam secukup rasa

A(tumbuh halus).
1 kuntum bunga kantan, dihiris
1 batang serai hiris halus
1 biji bawang besar, potong kecil
3 biji cili merah
3 ulas bawang putih
1 hirisan nipis halia
1/2 inci belacan, dibakar

CARA MEMBUATNYA :-)

1. Ikan disiang, cuci bersih dan kelar2 sedikit. Perap bersama serbuk kunyit, lada hitam tumbuk dan sedikit garam selama 5 minit, kemudian goreng hingga garing. Angkat, toskan minyak dan letak dalam pinggan sesuai.
2. Panaskan minyak, tumis bahan2 tumbuk halus hingga harum, masukkan tomato dan kacau hingga tomato layu, tambah sos cili, cili kisar dan gula. Masak hingga garing dan terbit minyak.
3. Perasankan dengan garam dan gula secukup rasa, tambah jus limau nipis dan gaul rata. Rasa dan jika ok boleh matikan api. Tuang sambal tadi atas ikan goreng, ratakan dan tabur hirisan bunga kantan. Hidangkan segera bersama nasi hangat.

Soft Marble Cake



My parents are here.
Chocolate cake is not an option for them, so I was searching for marble cake recipe.
Found this from Ummi's.
The many colours were Laiqa's idea.
I just copy paste the recipe.

SOFT MARBLE CAKE

# 270 gm mentega
# 250 gm gula kastor
# 260 gm tepung gandum
# 1 camt baking powder
# 6 biji telor
# 2 camb. susu pekat manis (condensed milk)
# 1 camb ovalette
# 1 camb air
# 1 camt esen vanila
# 10 gm serbuk koko
# 1 camt chocolate emulco (optional)
Cara-Cara:-

1. Griskan tin kek berukuran 10x7x3 atau 20 - 23 cm springform. Ketepikan.
2. Ayakkan tepung bersama dengan baking powder dan ketepikan.
3. Satukan mentega, susu, esen vanila dan pukul sehingga gebu dan ringan (apabila diangkat dengan spatula, adunan tidak jatuh). Ketepikan.
4. Kemudian dalam bekas lain, satukan telor, ovalette, air, gula, campuran tepung tadi dan pukul sehingga kembang dan rata.
5. Masukkan adunan mentega (no. 3) ke dalam adunan no. 4. kacau rata.
6. Keluarkan 1/4 adunan dan campurkan dengan serbuk koko dan chocolate emulco. Kacau hingga sebati.
7. Masukkan 3 senduk adunan plain ke dalam tin dan 1 senduk adunan cokelat. (
8. Ulangi sehingga habis adunan.
9. Ambil chopstick dan buatkan bentuk marble.
10. Kemudian bakar pada suhu 180C selama 45 - 50 minit atau sehingga masak (ikut oven masing-masing).
11. Setelah masak, padamkan api oven dan biarkan kek di dalamnya selama 5 minit.
12. Selepas itu bolehlah dikeluarkan dari oven dan biarkan betul2 sejuk baru dipotong.

Blueberry Butter cake

Since I still have some frozen blueberries left from my last cooking adventure, i searched for recipes that calls for blueberries. Found one in Gert's.


Ingredients :

2 stick of butter (1 cup)
1 1/4 cup of sugar
5 eggs
1/2 cup of milk
2 1/2 cup of flour
1 tsp of baking powder
1/2 tsp of salt
1 tsp of vanilla
2 cups of fresh blueberries (toss with 1 tbsp of flour)

1. Preheat oven to 350 degrees. Butter and prepare a cake pan.

2. Sift the flour, baking powder and salt into a bowl, and set aside. In a mixer beat the butter and sugar until light and fluffy.
3. Beat in the eggs one at a time follow by vanilla. Then slowly beat in flour in 3 addition alternately with milk.
4. Lastly fold in the blueberries. Pour batter into prepared pan. Bake until tester inserted near center of cake comes out clean about 1 hour or until golden brown.
5. Cool cake in pan on rack 10 minutes. Turn cake out onto cooling rack and cool completely before cutting into it.

Mexican Bun




Got the recipe from recipezaar.com

Bahan2:
for filling:
- 1/2 cup salted butter, softened
- 1/4 tsp vanilla essence
- 3 tbsp brown sugar

for topping:
- 1/2 cup butter
- 1/2 cup icing sugar
- 2 eggs
- 2 tbsp instant coffee (Nescafe), dilute in water
- 1 cup all purpose flour

for the sweet bun:
- 5 cups high-protein flour
- 1/3 cup caster sugar
- 1/2 tsp salt
- 1 1/2 tsp instant dried yeast
- 1 egg
- 1 cup fresh milk
- 1/4 cup butter

Directions

For Filling:

  1. Beat butter in electric mixer on medium speed with the paddle attachment for three minutes. Blend in vanilla essence and brown sugar. Spoon mixture into bowl and refrigerated until firm.
  2. Divide mixture into 20 g portion into ball. Keep refrigerated until ready to use.
For Topping:.
  1. Beat butter and icing sugar in electric mixer with the paddle attachment on medium speed for five minute until mixture is light and fluffy.
  2. Gradually beat in eggs. Mix in coffee flavouring.
  3. Sift flour onto mixture and mix on low speed until combined.
  4. Refrigerate until ready to use.
For Sweet Dough:.
  1. Mix sifted flour, castor sugar and salt in electric mixer with dough hook on low speed for one minute. Mix in yeast.
  2. Add egg and water or milk. Mix on low speed for another minute. Mix on medium speed for eight minutes.
  3. Mix in butter. Mix five minutes more on medium speed until soft, smooth and elastic(but not sticky) dough forms.
  4. Remove dough from mixture and shape into a ball. Divide the dough into 55 g portions(should get 17 portions).
  5. Roll each portion into a ball. Cover the balls of dough and leave to rest for 10 minute
To shape the buns:.
  1. Flatten a ball of dough with the palm of your hand.
  2. Place a ball of filling in the centre of the dough.
  3. Gather the edge and pinch to seal. (Be sure to seal well or the filling will leak out during baking.) Pat into shape and place on a greased baking tray.
  4. Repeat with remaining portions of dough.
  5. Place each bun about 7.5 cm apart on the baking trays. Prove for 45 min in a warm place.
  6. Pipe the topping on the buns in a spiral, starting from the centre.
  7. Bake in preheated oven at 175 deg C for 15 min or until buns are lightly brown.

Chocolate Cake



2 cups boiling water
1 cup cocoa powder
2 3/4 cups all-purpose flour
2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 cup butter, softened
2 1/4 cups white sugar
4 eggs
1 1/2 tsp vanilla extract


DIRECTIONS

1. Preheat oven to 175 degrees C. Grease cake pans.
2. In medium bowl, pour boiling water over cocoa, and whisk until smooth. Let mixture cool.
3. Sift together flour, baking soda, baking powder and salt; set aside.
4. In a large bowl, cream butter and sugar together until light and fluffy.
5. Beat in eggs one at time, then stir in vanilla.
6. Add the flour mixture alternately with the cocoa mixture.
7. Pour batter into the greased baking pan.
8. Bake in for 25 to 30 minutes. Allow to cool.

Blueberry Orange Muffins



INGREDIENTS

1 cup quick rolled oats
1 cup orange juice
1 teaspoon grated orange zest
1 cup vegetable oil
3 eggs, beaten
3 cups all-purpose flour
1 cup sugar
4 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1-2 cups fresh blueberries


Directions:

- preheat oven to 175 degrees C
- soak oats in orange juice
- sift flour, baking powder, salt and baking soda into a bowl
- add in sugar, orange zest
- combine eggs and oil
- pour the oil micture into the dry. add in oats+juice
- mix well
- pour into a well-greased muffin tin
- bake 18minutes, or until toothpick inserted comes out clean

Blueberry Buckle


INGREDIENTS

* 3/4 cup white sugar
* 1/4 cup shortening
* 1 egg
* 1/2 cup milk
* 2 cups all-purpose flour
* 2 teaspoons baking powder
* 1/2 teaspoon salt
* 2 cups fresh blueberries
* 1/2 cup white sugar
* 1/3 cup all-purpose flour
* 1/2 teaspoon ground cinnamon
* 1/4 cup butter, softened



DIRECTIONS

1. Preheat oven to 375 degrees F (190 degrees C). Grease one 8x8 inch pan.
2. Cream together 3/4 cup sugar, shortening, and egg.
3. In a separate bowl mix together 2 cups flour, baking powder, and salt. Stir into sugar mixture, alternating with milk. Stir in blueberries. Pour into greased 8x8 inch pan.
4. To make topping: Combine 1/2 cup sugar, 1/3 cup flour, cinnamon, and butter. Sprinkle over cake batter.
5. Bake at 375 degree F (190 degrees C) for 25-30 minutes.

Cinnamon Swirl Bread


INGREDIENTS

* 1/4 cup butter,
* 1 cup sugar ( I lessen to 1/2cup)
* 1 egg
* 2 cups all-purpose flour
* 1 teaspoon baking powder
* 1/2 teaspoon baking soda
* 1/2 teaspoon salt
* 1 cup buttermilk

* 1/3 cup sugar
* 1 tablespoon ground cinnamon



DIRECTIONS

1. Beat butter, 1 cup sugar and egg until blended.
2. Sift dry ingredients together, ie. flour, baking powder, baking soda and salt.
3. Add dry ingredients to egg mixture alternately with buttermilk.
4. In another bowl, combine the cinnamon and 1/3 cup sugar.
5. Pour a third of the batter into a greased loaf pan, sprinkle with a third of the cinnamon-sugar. Repeat layers twice.
6. Bake at 180 degrees for 45-50 minutes or until a toothpick inserted near comes out clean.
7. Cool before removing.

Kari Sotong Sumbat



First time makan ni di rumah kak Eja di Ipoh ni beberapa thn lepas. Something different than the usual curry, and its a variation to cook squid. Selalu x de idea kalau nk msk sotong.

Bahan2:

Sotong (lebih elok kalau dpt sotong yg besar2), bersihkan, buang kulit nipis, tulang

bahan A-
Isi ayam, cincang
1 biji ubi kentang, potong dadu kecil
sedikit daun sup dan daun bawang
1/2 biji bawang besar, potong dadu
garam
lada sulah

- campurkan semua bahan A
- sumbatkan ke dlm sotong, jgn terlalu penuh, tinggalkan ruang, kerana sotong akan mengecut apabila dimasak.
- sumbatkan dgn kepala sotong dan cucuk dgn lidi

Bahan kari-

2 camb minyak masak utk menumis
1 biji bwg merah, hiris halus
1 ulas bawang putih, hiris halus
1 peket rempah kari, dibancuh dgn sedikit air, membentuk pes
1 mangkuk santan
sedikit air asam jawa
garam


Cara:
- panaskan minyak.
- tumis bawang merah dan bawang putih
- masukkan rempah kari. kacau hingga naik minyak.
- masukkan santan, air asam jawa dan sotong.
- biarkan sehingga mendidih
- perasakan dgn garam secukup rasa.

Cupcakes and Cake

I made this for my niece as a farewell for her before she's off to Adelaide.

These cupcakes- using the recipe from my old collection- Sour Cream Chocolate Cake.
I did not put any topping spread, just the flower deco using buttercream.
It's a bit messy, since i did this in a hurry. I was 'racing' with the kids, i have to finished deco quickly since the kids and the daddy keep on eating the plain cupcakes non-stop. I made around 20 pieces, and I only managed to deco 12.



This cake was made using the Spongy Cake recipe.I made into 2 layers. Plain vanilla flavour. In between I spread with whipped cream and blueberry fillings.

Pancake Roll


I saw this pancake roll in Jun's blog this morning. And since I have already planned to make pancakes for breakfast today, why not rolled them so that they looked more attractive.

I used my old recipe for the pancakes

Ingredients:
1 cup all-purpose flour
1 tbsp sugar
2 tsp baking powder
1/2 tsp salt
1 egg
3/4 cup milk
1/4 cup vegetable oil/ melted shortening
1/2 cup chocolate chip(optional)

Methods:
-heat your frying pan. no need butter if it's a non-stick pan
-mix all the ingredient(except choc chips) together in a mixer@ food processor (@ even simple blender). then mix in the choc chip if using.
-pour a scoopful over the pan. cook 1 minute each side.
-ready to eat.....

p/s the above recipe enough for 2 person.

- to make a pancake roll, pour half of the batter into the pan (to make a large pancake)
- when cooked, put on a plate
- spread some paenut butter/ chocolate spread/ honey
( I used pancake syrup) onto one side
- roll, cut into 1/2 inches
- serve warm

Ikan Siakap Stim Limau

Bahan2:

1 ekor ikan siakap, bersihkan, kukus sekejap. Selepas 10 minit, tuang kan air dlm pinggan kukusan

4 biji limau nipis, diperah jusnya, kulitnya disimpan
6-7 biji cili padi, dihiris
1 inci halia, hiris nipis2
5 ulas bawang putih, diketuk
1 camt gula
garam mengikut rasa

hiasan-
daun sup
daun bawang

cara membuatnya:
- campurkan air limau nipis, cili padi, halia, bawnag putih, gula, garam dan tambahkan 1/2 cawan air
- masak sekejap
- jiruskan ke atas ikan yg tlh dikukus tadi, taburkan dgn hirisan kulit limau nipis
- kukus 10-15 minit
- boleh dihidangkan, keluarkan kulit limau dahulu, dan taburkan dgn daun sup dan daun bawang.

Asam Pedas

Ini asam pedas versi senang (AKA versi malas) :):);P


2 keping ikan jenahak (ikan lain pun boleh)

3 biji bawang merah, ditumbuk
2-3 camb cili mesin
2 camb asam jawa, ambil airnya
2 cawan air
2 kuntum bunga kantan, dibelah empat
segenggam daun kesum
garam
gula

- panaskan 2camb minyak masak
- tumis kan bawang sehingga agak garing
- masukkan cili mesin, kacau beberapa minit
- tuangkan air asam jawa dan air
- biar mendidih
- masukkan bunga kantan, biarkan beberapa minit
- masukkan daun kesum
- akhir sekali, masukkan ikan
- biar mendidih 5-10minit
- perasakan dgn garam dan sedikit gula.

Mee Sup

This is very simple. My hubby and kids love this. Actually they love anything simple, especially with clear soup.

500 gm yellow mee/ noodles

1 onions, sliced
2 garlic, crushed
1 tbsp oyster sauce
1 chicken breast (sliced thinly)
10 medium sized prawns
3 cups water
1 tsp cornflour (optional-if u want it to be thick)

baby corn
carrots
sawi
button mushrooms
sweet pea

salt
white pepper

garnish
- bawang goreng
- daun bwg
- daun sup
- cili merah

methods:

- saute onion and garlic ( sampai agak garing)
- add in oyster sauce, chicken and water.let boil.
- add prawns and vegetables
- flavour with salt n pepper
before serve, add noodle
- best eaten with 'cili jeruk'

Kek Marble Susu


First saw this at Ezura's, then again at Mat Gebu's...
Original recipe is from chef Norzailina Nordin.

Anyway, I should change the name from marble cake to tiger cake...:)



Bahan-Bahannya :-)

250 g mentega (nak sedap guna mentega berkualiti tinggi)
230 g gula halus
2 camca teh ovallate
4 biji telur gred A
270 g tepung halus*
1 camca teh baking powder*(*disatukan dan diayak)
60 g susu pekat manis
2 camca besar serbuk koko
2 camca besar susu cair
1 camca teh coklat emulco

Cara membuatnya :-)
  1. Pukul mentega, ovallate dan gula halus hingga putih. Masukkan telur satu persatu sambil terus memutar hingga kembang dan gula hancur. Masukkan susu pekat dan gaul rata.
  2. Perlahankan speed dan masukkan tepung sedikit demi sedikit hingga habis, gaul rata. Bahagi adunan kepada 2 bahagian yang sama banyak. Satu dibiarkan tanpa warna dan satu bahagian di campur dengan susu cair, serbuk koko dan coklat emulco. Gaul hingga sebati.
  3. Tuang secara berselang seli antara adunan tanpa warna dan adunan coklat dalam tin yang telah dilenser dengan mentega dan dasarnya dialas dengan kertas minyak. Kemudian buat beberapa pusingan dengan menggunakan chopstick.
  4. Bakar dalam oven yang telah dipanaskan pada suhu 175C selama 30 - 35 minit. Sejukkan 5 minit sebelum dikeluarkan dari tin. Sejukkan sepenuhnya atas jaringan dan hias ikut suka..

Masak Lemak Terung

I learnt this from my late mother-in-law. It was something new for me. May be this is the east coast way of making it.


Recipes:

1 ikan kembung/selayang, direbus, ambil isi
1 terung panjang, dipotong
3 ulas bawang merah
1 camt lada hitam
santan dari sebiji kelapa
asam keping
cili hijau/ cili padi
garam

- tumbuk bawang merah dan lada hitam, tumbuk sekali isi ikan dan garam
- masukkan ke dlm periuk
- tambahkan santan
- masak sehingga santan menggelegak
- masukkan terung,asam keping dan cili
- masak sehingga terung lembut.

Masak Taucu Ikan Kembung




I cook this dish only when my parents come to visit. One thing is that my hubby and the kids doesn't like it (and doesn't want to even try it). Another thing is that it is not fun eating it all by yourself.

the recipe:


4 ekor ikan kembung, kelar2 kan, lumur dgn garam kunyit, goreng

2 ulas bawang putih, hiris halus
1 inch halia, hiris
4-5 camb taucu
2 keping asam keping
1 biji bawang besar, belah 4
5 biji cili hijau, belah jgn putus


- tumis bawang putih dan halia
- masukkan taucu, kacau sebentar
- masukkan 2 cawan air, biar mendidih
- tambahkan asam keping, bawang besar dan cili hijau
- masukkan ikan, sedikit garam
- selepas 10minit, siap.

Rolled Chicken Sandwich



My hubby bought this chicken sandwich slices.
I made the usual chicken sandwich with bread, lettuce, tomatoes, cucumber, etc, but umar doesn't like it.
So, I rolled it in bread.



6 Chicken sandwich slices (can use chicken bologna or the likes)
6 bread
2 eggs, beat
breadcrumbs
flour mix with little water to make a thick paste


-roll the bread flat using a rolling pin (to avoid oil from seeping thru while deepfrying)
-lay chicken slices on the bread and roll tight, use the flour paste as glue, at the end
-dip in egg
-roll in breadcrumbs
-deep fry until golden
-serve with chilli sauce..


the lower picture is the one using sardines instead of chicken slices.



Air Asam Pekat


Air asam ni berbeza skt dgn air asam biasa sbb separuh bahan2nya dikisar, menjadikannya lebih pekat.

Air Asam Istimewa


1 biji tomato
1 biji bawang besar
10 biji cili padi
belacan sedikit
segenggam asam jawa
gula
garam

cara menyediakannya:
- sediakan air asam jawa yg pekat, masukkan dlm blender bersama belacan
- potong dua tomato, sebelah masukkan dlm blender, bakinya dipotong dadu
- bawang besar juga dipotong dua, sebelah dipotong dadu, baki dimasukkan dlm blender
- cili padi juga dibahagi dua, 5 biji dihiris halus
- kesar hingga halus, perasakan dgn garam dan gula. tuang dlm mangkuk
- gaul dgn tomato, bawang besar dan cili yg dipotong


Dalam gambar- ikan siakap digoreng (malas nk bakar :)) dan ayam goreng berempah.
